Parda biryani is an authentic dish of lucknow based on non-vegetarian food but as a vegetarian I replaced chicken with soya chunks.parda on the top also is eaten as bread which complete ur meal .

  2. 1 cup vegetables (onion,carrot capsicum,beans, cauliflower)
  3. 1 cup soya chunks
  4. to taste Salt
  5. 1 tsp red chilli powder
  6. 1 tsp biryani masala
  7. 1/2 cup curd
  8. 2 tbsp milk
  9. Few strands saffron
  10. 4-5 drops biryani assence
  11. 1 tsp onion seeds(kalonji)
  12. 2 tbsp desi ghee
  13. 2 tbsp cashews
  14. Few drops red and green colour (optional)
  15. Handful mint
  16. 1 tbsp brown onion(optional)

  18. 1 cup all purpose flour
  19. 1 tsp yeast
  20. 1 tbsp butter
  21. 1 tsp sugar
  22. 1/4 tsp salt

Instructions to make to make Parda biryani

  1. Heat 1tbsp oil in a pan add chopped vegetables and cook till tender add soaked and drained soya chunks cook fir few more time.add salt,red chilli powder and 1tsp biryani masala.switch off the gas.kerp it cool.
  2. Add heated curd and mix well keep aside.
  3. Now mix all ingredients of dough and knead it a firm dough.kerp aside for 20 minutes.Take a big ball of dough and flatten it in a thick but big chapati.
  4. Grease oil ina oven proof dish,sprinkle kalonji seeds. Put the chapati on it and set with light hands in the dish.
  5. Now on the bottom first spread fried cashews,than spread vegetable mix and than layer rice.Spread brown onion layer.
  6. Spread mint leaves on it and again repeat the layer in same process.sprinkle salt and,biryani masala.
  7. Now add.saffron in milk and spread it on the top.sprinkle desi ghee,essence, colour and lastly stretch the edges of dough and close it in center.
  8. Now grease with little oil sprinkle kalonji over it.bake it in preheated oven at 180° till golden in colour on top.in this quantity I have make 2 one small and one big,y can make one big only depend on size of mould.
  9. After browning give rest for 2 minutes and than de mould it carefully.cut carefully and ready to serve with raita.parda is also eaten as naan,so it's a complete meal to enjoy.
