  14. 1.5 tsp Garam Masala Powder –
  15. 1 tblsp Ginger Garlic Paste
  16. to taste Salt
  17. 1 tblspn lemon juice
  18. For Masala :
  19. 4 tblspn + 2 tblspn Oil
  20. 3 large sliced thinly onion
  21. Curry leaves a handful
  22. 3 tbsp Ginger Garlic Paste
  23. 2 large chopped finely tomato
  24. 2 tbsp Coriander Powder / Malli Podi
  25. 1 tbsp Chilli Powder
  26. 2 tsp Pepper Powder –
  27. 1 tsp Turmeric Powder / Manjal Podi –
  28. 2 tsp Cumin Powder / Jeera Podi
  29. 1 tblspn garm masala powder
  30. to taste Salt
  31. 1 cup Curd / Yogurt –
  32. as needed Water
  33. Coriander leaves as needed finely chopped
  34. Mint Leaves as needed finely chopped
  35. Whole spices:
  36. 1 tsp Fennel Seeds / Sombu / Saunf
  37. 1 tsp Cumin Seeds / Jeerakam
  38. 2 cm Cinnamon / Pattai
  39. 3 Cardamom / Yelakai
  40. 3 Cloves / Krambu
  41. 1 Bay Leaf
  42. 1 piece Black Stone Flower / Kal Paasi
  43. 1 Star Anise –

Instructions to make to make Biryani

  1. Wash and soak basmati rice for 30 mins. Drain it and cook it as per this directions. Drain and set aside.

    Take saffron in a bowl, add little milk and let it sit till everything is done.
  2. Take all marinating ingredients in a bowl and mix well. Leave to marinate for 15 mins to 1 hour.
  3. Heat 2 tblspn oil in a pressure cooker. Add in beef and stir fry for 5 mins. Add in 1.5 cup of water and mix well. Pressure cook for 10
    whistle, simmer for 15 to 20 mins. Turn off the heat and let the steam go all by itself. Open the cooker and check for doneness.
  4. Now heat oil in a kadai. Add in whole spices and sizzle for a min.Add in onions, curryleaves and salt. Cook till onions get golden.Add in tomatoes and cook till it gets mushy.
  5. Add in all spice powder and mix well. Add in yogurt and give a good mix.Add in half of the mint and coriander leaves.Add in the cooked beef along with liquid and mix well. Cook till it gets thick.
  6. Now heat ghee in a pan, add in onions and fry till golden, add in cashews and kishmish and fry till golden. Set aside.
  7. Now lay the cooked basmati rice over the masala, top with mint and coriander leaves, fried onions, cashews and kishmish along with the ghee, saffron milk. Cover with a tight lid and put this over a tawa on low heat.
  8. Let this cook on dum for 15-20 min.Now biryani is ready.
