  1. 1 cup regular rice
  2. 1/2 cup moong daal
  3. 1 tbsp toor daal
  4. 1 tbsp urad daal
  5. 1/2 cup fresh curd
  6. 1/4 tsp baking soda
  7. 2 tsp ginger garlic paste
  8. 2 tsp green chilli paste
  9. 1 tbsp oil
  10. 1/2 tsp mustard seeds
  11. 5-6 curry leaves
  12. Pinch hing
  13. 5-6 methi dana
  14. 1 cup luaki (grated)
  15. Salt
  16. 1/2 tsp Corinader powder
  17. 1/2 tsp turmeric powder
  18. 1/4 cup chopped coriander
  19. 1 tsp oil
  20. White sesame

Instructions to make to make Handvo

  1. Soaking rice and dals:
    in a bowl take rice, moong dal. tuvar dal and urad dal
  2. Soak for 5 to 6 hour
  3. Crush in mixture and make a thick batter
  4. Take out in a bowl add curd and mix well
  5. Add baking soda and cover the better for ferment 8 to 9 hours or overnight
  6. In a small grinder take ginger, garlic, green chilies.add 1 tbsp water and grind to a smooth paste.
  7. Heat 1 tbsp oil in a small pan.add mustard seeds, then add fenugreek seeds, hing and 1 tsp chopped curry leaves.fry for a few seconds.
  8. Then add the ginger+garlic+green chilli paste.saute it
  9. Add lauki in batter
  10. Also add turmeric powder and coriander powder.mix well,now add coriander leaves and mix well
  11. Add salt,heat a pan and 1 tbsp oil in it,Pour handva better thickness is 1 to 1.5 inch
  12. Sprinkle some sesame seeds on top all over the batter.cover the pan with a lid and then cook handvo on a low flame.
  13. After 10 to 15 minutes check handvo, And turn over, Also cook for 20 to 25 minute or until cooks.Serve hot
