- For cooking Rice
- 1 cup Basmati rice
- Salt
- 2-3 green Cardamom (elaichi)
- 2-3 cloves(laung)

- 1 large onion thinly sliced
- 1 large potato (diced)
- 1/2 cup fried Paneer (diced)
- 1/2 tsp ginger garlic paste
- 1/2 cup green peas(boiled)
- 1 cup soya chunks boiled
- 3-4 green chillies chopped
- 1 bay leaf (tej Patta)
- 1/2 tsp shahi jeera
- 1 strand mace(javitri)
- 2-3 green Cardamom
- 1 small cinnamon stick(dalchini)
- 2-4 cloves(laung)
- 1 tsp black pepper
- 1/4 tsp red chilli powder
- to taste Salt
- 1/4 cup beaten curd
- 8-10 cashews
- 2 tbsp ghee/oil
Instructions to make to make Soya Biryani
- Wash and rinse rice in water 3-4 times soak it in water for around 15mins
- Take a boil water add cloves, cinnamon, green Cardamom and salt
- Then add rice and cook it till it is 75% cooked..drain the excess water..
- While the rice are cooking then prepare the vegetables
- Heat ghee/oil in a pan or a pressure cooker add shahi jeera, bay leaf, green Cardamom,cloves and cinnamon..
- Then add onions and fry them till they are golden brown
- Add the ginger garlic paste and green chilli and fry till it is cooked..Then add salt, black pepper
- Now add all the vegetables, soya chunks,paneer and cook them for 2-3mins
- Add beaten curd to the vegetables along with 1cup of water..cover the pan and cook for around 5-6 mins..
- When the vegetables are cooked add cashews to the gravy..mix well and set the cooked vegetable aside
- Divide the gravy and rice into 2parts..add the 1st layer of vegetables at the bottom of a pressure cooker or a deep pan..
- Then add a layer of rice and 1/2tsp of biryani masala on top..
- Then again make the second layer of vegetables and rice
- You can seal the vessel tightly with aluminium foil and place a heavy lid on top..
- Cook the biryani on medium heat for 10-15mins..serve hot with boondi Raita..
